Las Nieves | 🥇Traditional Honey & Natural Processes
Finca Las Nieves is located in the Sierra Madre South Mountains of Oaxaca, just two hours from the world-class surf destination of Puerto Escondido. Historically, this region was a prominent coffee-producing area—so much so that Puerto Escondido was originally founded as a port for shipping coffee. However, throughout the 20th century, declining global coffee prices and the region’s remoteness led many farms to be abandoned or fragmented.
Founded in 1880, Finca Las Nieves remained dormant for decades until it was revitalized in 2006 through a cooperative effort. Over the past 18 years, the farm has been transformed using organic methods and equitable labor practices. Today, we cultivate a wide range of coffee varieties—including Gesha, Typica, Bourbon, Pacamara, Garnica, SL 28, Laurina, and Tabi—while preserving the native cloud forest ecosystem.
Our mission centers on regenerating a historic coffee landscape while exploring both ancestral and cutting-edge agroforestry techniques. These practices promote soil health, carbon sequestration, and biodiversity. Our coffee grows beneath a multi-layered canopy that provides up to 80% shade—essential for enhancing flavor complexity and environmental resilience.
Finca Las Nieves is proudly off-grid, powered entirely by solar, hydroelectric, and biodiesel energy. We are also stewards of numerous natural mountain springs, which we share with neighboring communities. Our cooperative model prioritizes fair wages, profit sharing, and knowledge exchange, supporting the region’s smallholder farmers and advancing sustainable coffee production for all.
Post-harvest, every coffee cherry is handled with meticulous care—emphasizing selection, monitoring, and feedback to preserve the integrity and essence of our living forest.
Quality beyond the cup means coffee so good, it gives back.
