Finca Los Morales is nestled at over 1,800 meters above sea level in the Alotepeque mountain range, facing the misty Montecristo forest in Santa Ana, Metapán, El Salvador. Its name carries the legacy of the Morales family, who returned to this region driven by childhood memories and the dream once buried during the civil war. Their journey back was not only about reclaiming land but also about revitalizing a forgotten region and uplifting its people.
The farm spans 45 manzanas, with 10 under cultivation—4 manzanas planted with Geisha and 6 with Pacamara and Kenya varieties. These trees are now four years old, and the work is carried out by locals, creating employment and nurturing community ties.
Harvest takes place near the end of January, with careful attention paid to collecting perfectly ripe cherries. The farm has its own small wet mill and a drying facility, including a UV-protected solar tunnel and African beds for sun-drying. Processes include 72-hour anaerobic fermentations, natural, and honey methods, with drying periods ranging from 30 to 40 days, depending on the weather.
The Morales family is committed to innovation and plans to introduce exotic varieties such as Bourbon Rosado, Sidra, and Mocca. Finca Los Morales is both a tribute to their heritage and a bold vision for the future of Salvadoran coffee.
